MILWAUKEE – The Kentucky Derby, the first jewel of horse racing’s Triple Crown, will be the featured attraction Saturday, May 5, at Potawatomi Bingo Casino.
Guests can view the annual “Run for the Roses,” and all of the races leading up to it, in the Casino’s spacious Off Track Betting Room, or on a massive 20-foot screen in the 500-seat Northern Lights Theater. Doors will open at 8:30 a.m. in the Off Track Betting Room and 9 a.m. in the theater.
MILWAUKEE – New seasonal offerings, a unique bar menu and sweet cocktails highlight the beginning of spring at Potawatomi Bingo Casino’s Dream Dance Steak.
The menu, created by Chef Matt Baier, features an array of seasonal dishes inspired by spring and the bold flavors of locally-produced ingredients. Guests can look forward to delicacies like seared sea scallops, served with bacon shallot jam, fennel leek puree couscous; the succulent taste of salmon filet, paired with salmon pancetta, lemon dill mascarpone and couscous salad; and a savory Berkshire pork porterhouse from Uphoff Farm in Dane County, Wis. prepared with an herbal Porchetta rub, leek and potato hash and sugar snap peas.
MILWAUKEE – Dream Dance Steak, Potawatomi Bingo Casino’s four-star restaurant, will host a spectacular wine-pairing dinner showcasing the fine wines of Hill Family Estates, of Napa Valley, Calif.
The Hill Family Estates Wine Dinner, hosted by winery vice-president and director of sales Ryan Hill, will be held Thursday, April 5.
MILWAUKEE – Potawatomi Bingo Casino will host a Food and Beverage Job Fair from 10 a.m. to 4 p.m. Saturday, March 31, and from 3 to 8 p.m. on Monday, April 2. The job fair is open to the public and will be held at Potawatomi Bingo Casino’s Woodland Dreams Ballroom, 1721 W. Canal Street.
The Casino will hire for more than 100 food and beverage positions, including cooks, dishwashers, bussers, hosts, servers, cocktail servers, bartenders and managers. Food and Beverage hiring managers will be on site to conduct interviews and may extend offers to qualified applicants. Those attending must be at least 18 years old and apply for positions in advance at www.paysbig.com/careers. Additionally, participants must bring a valid photo ID and Social Security Card.
MILWAUKEE – Certified sommelier and past Dream Dance Steak Sommelier Showdown champion Jessica Bell and Brendan Moore will return to Dream Dance Steak to compete in the 2012 Sommelier Showdown Dinner finale March 20. Bell, founder and CEO of My Wine School; and Moore, founder of Rootstock Wine Company, were winners in previous Showdown Dinners held last year.
MILWAUKEE – Potawatomi Bingo Casino recently named Brian Hairston Assistant Director of Table Games.
Hairston, of Franklin, joined Potawatomi Bingo Casino in 2010 as a Table Games Shift Manager. In his new position, he will assist in the oversight of operations and staffing of the Table Games department, the Casino’s 24-hour Poker Room and the Off-Track Betting venue.
Development expected to spur nearly 1,000 direct, indirect jobs
MILWAUKEE – Potawatomi Bingo Casino, owned and operated by the Forest County Potawatomi Community, announced today it is building a $150 million hotel adjacent to Potawatomi Bingo Casino in Milwaukee's Menomonee Valley, creating new jobs and generating millions in additional revenue for the Milwaukee area.
MILWAUKEE – Thirty children’s charities from southeastern Wisconsin are splitting $989,239 tonight, after Potawatomi Bingo Casino announced the amount of money raised during their 2011 Miracle on Canal Street program. Each charity received $32,841. Additionally, the program surpassed $11 million raised since its inception in 1994.

The 2011 Miracle charities will celebrate the joyous moment of unveiling the grand total with more than 1,000 Bingo guests and casino team members Friday, Dec. 9, during the Miracle Bingo Bash.
MILWAUKEE – Matt Baier has been named Chef at Dream Dance Steak, Potawatomi Bingo Casino’s four-star, four-diamond restaurant.
A veteran of the Dream Dance Steak kitchen, Baier has helped strengthen the restaurant’s impeccable reputation since joining the team in 2005.
