What is the best part about working at Dream Dance Steak?
MB: The fact that we’re only open five days a week. Anything more gets stressful.
How do you decide what specials/wines to serve?
MB: I tend to decide specials based on items we have on hand or special seasonal ingredients vendors provide.
JC: I decide what wines to serve with Matt’s specials so first I like to look at our dinner menu and focus on wines that will complement and pair well with our menu. I also try to read the audience. Traditionally, Wisconsinites tend to enjoy juicier red and white wines as opposed to overly tannic.
How much is improvised in the kitchen?
MB: It really varies by day and what ingredients we get in.
What’s your best advice to someone interested in being a chef?
MB: Get into a reputable kitchen and make sure it serves the style of the food you want to cook.
What’s your best advice to hungry/thirsty patrons?
MB: Well-done steaks take a little more time to cook so you might want to consider ordering an appetizer beforehand.
JC: We have a world-class wine list at the lowest prices in Milwaukee. We also look at current cocktail trends. We hit a homerun with the Wisconsin Old Fashioned. Come try one, or two.
