Dream Dance Steak to Hold Heart-Healthy Wine Dinner

MILWAUKEE – Dream Dance Steak, Potawatomi Bingo Casino’s four-star restaurant, is teaming up with Ehler’s Estates, of Napa Valley to host a heart-conscious wine-pairing dinner Monday, April 22.

The Ehler’s Estates Wine Dinner, hosted by winery national sales manager Armen Khachaturian, will also feature a heart-healthy menu prepared by Chef Matt Baier of Dream Dance Steak.

The five-course menu will feature dishes such as stuffed calamari with roasted garlic quinoa and chick pea sprouts; roasted pork loin prepared with blueberry puree, wilted dandelion greens, faro and flax seed cracker; and kangaroo served with red wine braised lentils and baby carrots. Wines showcased will include Ehler’s Estate Sauvignon Blanc, Ehler’s Estate Merlot, Ehler’s Estate 120/80, Ehler’s Estate 1886 and Ehler’s Estate Cabernet Franc.

The winery, nestled on 43 acres in northern St. Helena, Calif., produced its inaugural vintage Cabernet Sauvignon in 2000, under French philanthropist and founder Jean Leducq and wife Sylviane. Following Leducq’s death in 2002, Ehler’s Estate was left in trust to Jean and Sylviane’s Leducq Foundation, a non-profit organization that strives to combat cardiovascular disease. One hundred percent of proceeds from the sale of Ehler’s Estate wines is returned to the Leducq Foundation.  

The dinner costs $75 per person, not including gratuity. Arrival for the event is set for 6 p.m. with dinner scheduled at 6:30 p.m.
