Dream Dance Steak to Host Exclusive Hill Family Estates Wine Dinner

MILWAUKEE – Dream Dance Steak, Potawatomi Bingo Casino’s four-star restaurant, will host a spectacular wine-pairing dinner showcasing the fine wines of Hill Family Estates, of Napa Valley, Calif.

The Hill Family Estates Wine Dinner, hosted by winery vice-president and director of sales Ryan Hill, will be held Thursday, April 5.


Selections from Hill Family Estates will be paired with four of five exquisite courses prepared by Chef Matt Baier of Dream Dance Steak. The menu will feature dishes such as lamb ragout prepared with Zahtar tomato sauce and polenta, and bacon-wrapped venison made with house-cured bacon. Wines featured will include Hill Family Chardonnay, Hill Family Merlot, Hill Family Cabernet and Hill Family ‘Origin’.

Hill, son of founder Doug Hill, will be on hand to talk about his family’s vineyard and wines, and the unique wine-staining projects the winery has taken on. 

The dinner costs $65 per person, not including gratuity. Arrival for the event is set for 6 p.m. with dinner scheduled at 6:30 p.m.

With its first vineyard planted in 1984, Hill Family Estates now includes 12 vineyards totaling more than 250 acres in Napa Valley. The winery produces between 5,000-6,500 cases annually, and its Sauvignon Blanc, Pinot Noir, Syrah and Cabernet Sauvignon have been well received since their inaugural releases in 2001.
