Dream Dance Steak Unveils Spring Menu Featuring Local Ingredients and House-made Meats and Cheeses

MILWAUKEE – New seasonal offerings, a unique bar menu and sweet cocktails highlight the beginning of spring at Potawatomi Bingo Casino’s Dream Dance Steak.

The menu, created by Chef Matt Baier, features an array of seasonal dishes inspired by spring and the bold flavors of locally-produced ingredients. Guests can look forward to delicacies like seared sea scallops, served with bacon shallot jam, fennel leek puree couscous; the succulent taste of salmon filet, paired with salmon pancetta, lemon dill mascarpone and couscous salad; and a savory Berkshire pork porterhouse from Uphoff Farm in Dane County, Wis. prepared with an herbal Porchetta rub, leek and potato hash and sugar snap peas.


Kangaroo served with blackberry chutney and wilted spring greens, and the prosciutto and fresh mozzarella salad, made with house-cured prosciutto and house-made mozzarella and topped with arugula, organic tomatoes and a cool Riesling vinaigrette dressing are refreshing options to start off a dining experience. 

Seasonal menu items complement the restaurant’s signature steaks, like grass-fed filet mignon, New York strip and free-range veal chop.

New to the menu is a selection of fresh Dream Dance Steak cheeses, handcrafted in-house from hormone-free milk and cream. Selections can be ordered in flights of three, five or seven and include fresh mozzarella, ricotta and ricotta salada. The cheeses complement additional offerings of Dream Dance Steak Vanilla Goat, Pleasant Ridge Reserve, Grand Cru Gruyere Surchoix, Sarvecchio Aged Parmesan and seasonal cheddar from Wisconsin Master Cheese Makers.

The Mix and Mingle menu, featuring specialty drinks, small plates and sandwiches, is available in Dream Dance Steak’s bar and lounge area from 5 to 9 p.m. Tuesday – Friday. Tempting the taste buds is a caprese flatbread with basil pesto and house-made mozzarella; and shrimp ceviche prepared with Laughing Bird Shrimp and blood orange juice. 

Welcome the warmer weather with cocktails such as a champagne margarita, lemon berry sangria and an old fashioned mixed with blueberries, orange bitters and a cinnamon stick.
