Dream Dance Steak Unveils Summer Menu

MILWAUKEE – A new seasonal menu, colorful cocktails and sweet desserts highlight the onset of summer at Potawatomi Bingo Casino’s Dream Dance Steak.

The menu, created by Sous Chef Matt Baier, features an array of our guest’s favorite seasonal dishes inspired by summer and the bold flavors of locally-produced ingredients. Guests can look forward to delicacies like seared sea scallops, served with fresh sugar snap peas and sweet corn; and the light, satisfying taste of halibut prepared with spicy polenta and an organic heirloom tomato pomodoro sauce.

Lamb chops served with a crisp fennel watercress salad and the Heirloom Tomato Salad topped with a cool Riesling vinaigrette dressing are refreshing options to help you unwind during hot summer evenings.

Seasonal menu items complement the restaurant’s signature steaks, like Grass-Fed Filet Mignon, New York Strip and for the more adventurous – Kangaroo.

Unique desserts complete any visit to Dream Dance Steak, including Cherry Smoked Bacon Doughnuts with a maple bacon glaze, Vanilla Lavender Crème Brulee and a Trio of Cherry, Root Beer and Orange Cream Soda Shooters topped with malt ice cream and house-made marshmallows.

Dream Dance Steak General Manager and certified sommelier Bryan Schmidt has compiled an extraordinary wine list, featuring 20 wines for $20 to run throughout June. Fight the summer sizzle with cocktails such as the Cool Cucumber Martini, Peach Sangria and the Key Lime Pie Martini, accented with a graham cracker rim.
