Potawatomi Bingo Casino To Host Champion Steer Dinners
MILWAUKEE – Several restaurants at Potawatomi Bingo Casino will celebrate the local food movement with several spectacular dinners showcasing the Reserve Grand Champion Chianina steer purchased from the 44th Annual Governor’s Red, White and Blue Ribbon Livestock Auction at the 2012 Wisconsin State Fair. The 1,339-pound Chianina steer will be the highlight of dinners hosted in Wild Earth Cucina Italiana, Dream Dance Steak and The Buffet.
The Buffet will host a State Fair Premium Dinner on Friday, Nov. 9, where chefs have created traditional and contemporary dishes featuring various sections of the prized steer. A variety of flavors will come alive in mouth-watering options such as slow-roasted beef baron au jus popovers, slow-roasted beef brisket and stir-fried skirt steak and shrimp. The dinner will be paired with all-you-can-eat crab legs, a state fair-themed alcoholic beverage and a selection of desserts. Seating is limited. Revered for its high-quality beef, Chianina cattle have been raised in Italy for thousands of years prior to becoming a world breed during World War II. Wild Earth Cucina Italiana will celebrate the valued steer with Festa Chianina, set for the evening of Tuesday, Nov. 13. Chef Audrey Vandenburgh and her culinary team will treat guests to a spectacular five-course menu featuring various cuts of the Chianina steer, paired with wine selected by certified sommelier Christian Damiano. Courses include papardelle with braised short ribs and porcini and grilled tenderloin and shrimp. Seating is limited.
