Potawatomi Bingo Casino's Newest Restaurant, Wild Earth Cucina Italiana, Open Sept. 7

MILWAUKEE – Potawatomi Bingo Casino’s newest restaurant, Wild Earth Cucina Italiana, will open to the public Sept. 7. The restaurant features the old world flavors of traditional Italian favorites, coupled with contemporary Italian fare. The inviting menu, coupled with friendly, hospitable service will make any guest feel as though they’re dining with family.

Chef Audrey Vandenburgh’s menu offers a wide selection of authentic Italian classics originating from Piedmont to Sicily and all regions between, including chicken carbonara, lasagna and spaghetti and meatballs; as well as unique variations on Italian-inspired recipes, such as Italian sausage sliders and Laughing Bird® shrimp and pancetta flatbread. Premium local and seasonal ingredients are utilized whenever possible, and a selection of breads, soups and desserts will be made from scratch, in-house daily.

A full bar features 30 bottles of fine Italian wine, hailing from every region in Italy, as well as hand-crafted cocktails and Italian beers. Other highlights include house-made beverages such as limoncello and Italian sodas in a variety of flavors.

Wild Earth Cucina Italiana will be open for dinner service Wednesday through Sunday. Serving hours are from 4 to 10 p.m. Sunday, Wednesday and Thursday and from 4 p.m. to 12 a.m. Friday and Saturday.
