Wild Earth Interview

Chef Audrey Vandenburgh, General Manager Vita Fugarino, Sous Chef Eduardo Medina

What can you tell us about the new spring/summer menu?
A: It utilizes fresh, local and seasonal ingredients. We’re currently developing recipes and having tastings to determine the menu.

What’s your creative process/inspiration when working on new dishes?
A: I do a lot of research on classic and traditional Italian dishes—and see how we can make these kinds of dishes work in Wisconsin. 

What are your influences?
E: I use what I’ve learned from other chefs, mixed with my own cooking style.

What’s the most popular dish at WECI?
A & V: Lasagna on the Classic side of the menu, Shrimp Scampi under Slightly Wild.
E: We recently did the Food & Froth tasting at the Museum and people just loved our mussels; they actually sought them out at the event! 

What’s YOUR favorite dish at WECI?
A: It changes with my mood every day! Right now, it’s probably a dish Eduardo created—the Beef Tournedos—three filet medallions stuffed with cheese. 

How do you cater to customers with dietary restrictions?
A: We prefer to go out and talk to the guests, personally, if they have allergies or restrictions. Because much of our menu is made-to-order, we are able to customize dishes and accommodate special requests. We can also do most of our menu gluten free. 

What’s your favorite thing about cooking?
A: Making a dish you’re really proud of—it’s like telling family and friends that you love them. 
V: When I cook for my family, everyone’s doing something or bringing something over. It’s a labor of love. 
E: My family gets together a lot and they always ask me to cook. It’s a good feeling when my family likes what I cook for them. 

What sets WECI apart from other Italian restaurants in Milwaukee?
V: The décor is very welcoming. The vision is like—you’re walking into my house. And even though we’re upstairs from the Casino, it’s much quieter than being on the casino floor.
